- 1 small spaghetti squash (about 3-4 pounds – 1 to 2kg)
- 2 tablespoons melted, butter
- Juice of 1 lemon
- 1/4 cup (60ml) vegetable stock (optional)
- 4 cloves garlic, finely minced
- 1 teaspoon Italian seasoning
- 1/4 cup finely minced parsley (or basil)
- Salt and fresh cracked black pepper
- 1/4 cup shredded parmesan cheese
