Lemon Garlic Butter Spaghetti Squash


Cut down on carbs, not comfort, with this veggie-loaded “pasta” dinner. Baked spaghetti squash strands are tossed with a fragrant lemon garlic butter sauce and sprinkled with Parmesan for a cheesy note.


Lemon Garlic Butter Spaghetti Squash

Ingredients :

  • 1 small spaghetti squash (about 3-4 pounds – 1 to 2kg)
  • 2 tablespoons melted, butter
  • Juice of 1 lemon
  • 1/4 cup (60ml) vegetable stock (optional)
  • 4 cloves garlic, finely minced
  • 1 teaspoon Italian seasoning
  • 1/4 cup finely minced parsley (or basil)
  • Salt and fresh cracked black pepper
  • 1/4 cup shredded parmesan cheese
